Per my tests, it seems there indeed don't have an option to delete the already added items in the Hero web part in SharePoint Online, but you may directly delete the Hero web part and add a new one, or move the item to the last tile and decrease the tiles to "Hide" the item (if the Hero web part is set to multiple tiles).
